ICI Champagne-Ardenne: “Chef portraits”, Matthieu Aigron
Radio · 15 September 2026
For the Relais du Goût, a food festival held in Reims from 18 to 20 September 2026, the radio station ICI Champagne-Ardenne (formerly France Bleu) broadcast a series of portraits of chefs from the region. The episode devoted to Matthieu Aigron presents Bulle 1924 as a restaurant that brings the Roaring Twenties back to life, from the décor to the plate.
The journalist describes the green banquettes, the Champagne-coloured Art Deco and the antique plates the chef hunts down at flea markets to serve modern dishes. The report looks back at his beginnings in the family kitchen in Châlons-en-Champagne, his training at the Ferrandi school and a first professional experience in Australia. We also learn that the menu changes about every three weeks, with seasonal produce from regional producers, and that the chef likes to revisit traditional dishes, such as the salade piémontaise of his childhood.
